This onigiri shop near Shinjuku Gyoen shapes every rice ball fresh right in front of you.
They use almost no pressure, keeping the rice fluffy and each grain intact, so it gently falls apart with every bite.
Choose from over 20 fillings—or add ¥100 to combine any two in one onigiri. My favorites were salmon and ikura, shrimp mayo and mentaiko, and the surprisingly addictive tantan egg yolk.
For a complete meal, try the set with two or three onigiri, shijimi miso soup, and house-made pickles.
